You need to use stasis, and then shoot all around him if you can't see the tentacles. You'll eventually hit all of them. Then the guy'll be dead. ;)

The main guy's tentacles stick against the wall after a few seconds and are nearly impossible to see. You have to shoot them and then the guy dies. ;)

I never played the first one, but I think I know what you're talking about. In Dead Space 2 the guys stuck in the wall have tentacles and they spit out little guys with one tentacle.
