Buy a copy of Megaman Anniversary collection, and play through Megaman 4 and Megaman 8.
Megaman 4's bosses are easy, and Megaman 8's bosses are fun and just as easy. And you will also enjoy Power Battles/Fighters.

Even though you "claim" Burstman's stage to be borng, Burstman himself is actually very easy. Or you could just be lazy and use asswords for all items and what-not. Oh, and the final Wily battle is very easy in Megaman 7.

Though with Megaman 7, the bosses can be pretty hard even on normal mode. Mostly because they dont give you much room to dodge when compared to the older games. Either that, or try and beat Junkman first. Hes not /THAT/ hard if you figure out his attack me
